Ultimate meringue recipe - Recipes - BBC Good Food
Oh my these are good!
So good in fact, that Bells can't have any.
What a shame, eh??
All for me to eat :)
Hehe
Ingredients
- 4 large organic egg whites , at room temperature
- 115g caster sugar
- 115g icing sugar
- Preheat the oven to fan 100C/ conventional 110C/gas 1⁄4. Line 2 baking sheets with Bake-O-Glide non-stick liner or parchment paper (meringue can stick on greaseproof paper and foil).
- Tip the egg whites into a large clean mixing bowl (not plastic). Beat them on medium speed with an electric hand whisk until the mixture resembles a fluffy cloud and stands up in stiff peaks when the blades are lifted.
- Now turn the speed up and start to add the caster sugar, a dessertspoonful at a time. Continue beating for 3-4 seconds between each addition. It's important to add the sugar slowly at this stage as it helps prevent the meringue from weeping later. However, don't over-beat. When ready, the mixture should be thick and glossy.
- Sift a third of the icing sugar over the mixture, then gently fold it in with a big metal spoon or rubber spatula. Continue to sift and fold in the icing sugar a third at a time. Again, don't over-mix. The mixture should now look smooth and billowy, almost like a snow drift.
- Scoop up a heaped dessertspoonful of the mixture. Using another dessertspoon, ease it on to the baking sheet to make an oval shape (pic 3). Or just drop them in rough rounds, if you prefer. Bake for 1 1⁄2-1 3⁄4 hours in a fan oven, 1 1⁄4 hours in a conventional or gas oven, until the meringues sound crisp when tapped underneath and are a pale coffee colour. Leave to cool on the trays or a cooling rack. (The meringues will now keep in an airtight tin for up to 2 weeks, or frozen for a month.) Serve two meringues sandwiched together with a generous dollop of softly whipped double cream.

Hamster game...
Seeing as it was a Sunday.
Bells thought it would be excellent evening
to actually play a game.
Now you might be thinking, what "Game" is Bells
thinking of??
Well, I think I'm asking that same question to myself.
*scratches my head*
So, I thought I better ask...
"Bells, what game do you have in mind?" ...
"Good question!" ... squeaked Bells
"We are going to play 'Hide & Seek'. I hide and you can try and look for me" said Bells, with a smile on her little face.
"Okay" ...
So, here I am, counting away until Bells starts scurrying around in her cage.

Hamster who ate an magnet...
Aww....
What a poor hamster to swallow a magnet!
"A HAPLESS hamster needed super powers when she got stuck to her metal cage — after chomping on a magnet from a Spider-Man toy."

Chocolate Strawberry Heart-Shaped Ice-Cream Sandwiches...
Mmm... the taste of chocolate just seems
so delicious!
And talking about chocolate!
How about 'Chocolate Strawberry Heart-Shaped Ice-Cream Sandwiches'??
I came across this website called www.marthastewart.com and they do
lots of different recipes.
Makes 24
Ingredients
- 2 3/4 cups all-purpose flour, plus more for dusting
- 1/2 cup cocoa powder
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 12 tablespoons (1 1/2 sticks) unsalted butter, room temperature
- 1 1/2 teaspoons pure vanilla extract
- 1 1/2 cups sugar
- 2 large eggs
- 1 tablespoon milk
- 2 to 2 1/2 pints strawberry ice cream, slightly softened
Directions
- In a medium bowl, sift together flour, cocoa powder, baking powder, and salt; set aside. In the bowl of an electric mixer fitted with the paddle attachment, cream butter, vanilla, and sugar. Add eggs and milk, and mix until combined. Add reserved flour mixture, and mix on low speed until incorporated, scraping the sides of the bowl with a spatula at least once. Divide the dough in half, and shape each half into a flat disk. Wrap each disk in plastic wrap, and chill until firm, about 1 hour.
- Preheat the oven to 350 degrees. Roll dough out on a lightly floured surface; use an offset spatula to unstick the dough every few turns of the rolling pin. Roll dough to an 1/8-inch thickness. Cut dough using a variety of heart-shaped cookie cutters from 2 1/2 to 3 inches in diameter, making sure there is a top and bottom cookie for each sandwich. Place hearts on a parchment-lined baking sheet; chill until firm, about 30 minutes. Remove from refrigerator; use a fork to prick holes all over the surface of the cookies. Bake until firm, 12 to 15 minutes. Let cool slightly on baking sheet, then transfer to a wire rack to cool completely.
- Using half the cookies, spoon softened strawberry ice cream about 1/2 inch thick on each underside. Place matching cookie on top of ice cream, top-side facing out. Transfer immediately to freezer to harden; repeat with remaining ingredients. Serve directly from the freezer. Sandwiches can be stored in an airtight container in the freezer for 3 to 4 days.
